A day in the life: day 2

Hello again! Time again for me to post everything I ate today, in excruciating detail. First up, breakfast! Grape Nuts, banana and soy milk. Sounds blah, but it’s actually one of my favorites. Don’t judge.

I ate breakfast on the patio, but just as I was finishing it started sprinkling. Not five minutes after I went back inside, the sky opened up and started pissing it down, and it hasn’t stopped all day. Cold and rainy always makes me want soup, so thank goodness I had some in the freezer for just such an occasion. Last week I made another Isa tester, Lotsa Veggie Lentil Soup. It made quite a lot, so I kept a few servings out for lunches last week, and froze the rest in individual portions for another time. Such as today. Thankfully, I had some cornbread muffins in the freezer as well. Instant comfort meal.

I ate it with a slice of Ezekiel 4:9 Low Sodium Sprouted Grain Bread spread with a tablespoon of Mighty Maple Peanut Butter.

Dinner was pizza. I made a nice, thin whole wheat crust, which cooked up so perfectly crispy on my pizza stone, I can’t accurately communicate the level of perfection reached without resorting to guttural noises. I topped it with pizza sauce, onion, green bell pepper, roasted red pepper, tofu ricotta and spinach.

At the end of the day, I wanted something sweet. I don’t usually indulge in dessert, but today I decided to throw caution to the wind and go for it. I decided on some Purely Decadent Cherry Nirvana with banana, walnuts and chocolate syrup.

And of course, the nutritional stats. I did end up having to take a calcium supplement, since I opted for dessert and not something a little more nutritionally sound, but it was so worth it.

The percentages listed with fat, carbs and protein indicate what percent of total calories came from each. The percentages listed with everything else indicate what percentage of the Recommended Daily Allowance they equal. Saturated fat, cholesterol and sodium should be below 100%. The vitamins, minerals and fiber should meet or exceed 100%.

Odds and ends

It’s really shameful that it’s been almost a week since I updated. Oops. I’ve been busy with lots of things though – not the least of which is cycling! The Brit and I dusted off our bikes (actually, he bought a new one and we dusted off mine, but whatever), and have been trying to get in as much cycling as possible. So far this month I’ve done 43 miles – my goal is 100 miles in May.

To help me keep up with my goal, I’ve put together a Cycle Progress Chart (some of you might have already seen it – it’s over there —>). If you notice it hasn’t budged in a few days, please feel free to give me a proverbial kick in the arse to get going again!

In other news, this last weekend Bianca of Vegan Crunk and I put together an awesome party. We called it the Prodigious Vegan Sushi-Palooza Madness Extravaganza. It totally lived up to its name. I haven’t uploaded any of my photos yet (not sure if I even have any worth posting), but go check out Bianca’s post about it – trust me, you won’t regret it.

The whole thing was covered in roasted red pepper sauce and onions, which is all The Brit wanted on his half (crazy man). I then added some tofu ricotta, black olives and arugula to my half, making it far superior.

Then I made a couple of testers for Kelly and Garrick’s Vegan Cookie Book (it’s in its final stages of testing! woo!). I made Rice Crispy Treats and Flapjacks.

Both of these recipe were awesome, just like all the other recipes in their book!

Lastly, I’ve been helping a friend plan and purchase items for a joint birthday party for her daughter and nephew this weekend. We’re making a ‘Pink Princess Doll’ cake and a ‘Lightning McQueen’ cake (from the movie Cars). Did I mention there are 130 people invited to this party? Yeah. On the plus side, she wants to make all of the cake vegan even though no one in attendance (including her) is vegan! Awesome, yes?

One a penny, two a penny

First off, *thank you* to everyone who got excited with me over The Brit’s conversion! I’m still so stoked about it! We’re working on finding a non-dairy milk he likes right now. Soy was a no-go, rice was a definite no-go, as was almond… oat seems to be okay so far. Anyone have any other suggestions?

I hope everyone had a good Zombie Jesus Day! On Good Friday I made Hot Cross Buns. Except… I left off the crosses due to laziness. I tried to make pseudo-crosses by cutting an “X” in the top of each bun, but when they baked they ended up looking more like little horns. I guess I should have called them Blasphemous Buns instead.



I made another tester for Bianca’s cookbook! This time it was Buttermilk Biscuits – a southern staple. She hit the nail on the head again with this awesome recipe! They were light, fluffy, AND 100% whole wheat. I cut them into hearts because it’s cute.

And what would southern-style biscuits be without gravy? Bianca’s creamy Sausage-Sage Gravy made this an awesome breakfast.


This baked lemon-herb tofu didn’t turn out as fabulous as I’d hoped, but it was still tasty enough to eat! Mashed gold potatoes can make up for anything less than stellar, anyway.



There was nothing less than stellar about this pizza, though! I made apple-sage sausages to grill at my parents’ house on Saturday, and this was the perfect way to use the leftovers. 


This was the first pizza I’ve ever made 100% from scratch. The ‘ricotta’ and pesto were inspired by the Isa Pizza in VwaV, but I didn’t have the right ingredients so I fudged it. Homemade: pizza dough, roasted red pepper sauce (no tomatoes – The Brit isn’t a tomato fan), tofu ‘ricotta’, spinach pesto (I didn’t have any fresh basil), apple-sage sausages and caramelized onions. This pizza was AMAZING.

And the best part? I still have half the pizza dough leftover, wrapped up in my freezer. I foresee much more homemade pizza in my future!

Last week some friends and I did a food swap. Kind of like a potluck, but you get to take the food home and eat other people’s leftovers. Basically it means that I ended up with yummy food that I didn’t have to cook. Score.

I made little veggie loaves, but you know what those look like so I won’t post yet another picture. Bianca made this delicious pizza:


I didn’t get a picture of Hart’s carrot soufflé (more like a casserole, but seriously yum). I also don’t have any pics of Nic’s pâté (my friends are so fancy, no?), because I already had too much food in my house, so I wrapped it up and put it in the freezer. I will take some pics when I do something with it. Meanwhile, you can check out Bianca’s much more thorough post about our swap here.

I also made some Self-Frosting Peanut Butter Cupcakes from My Sweet Vegan for the food swap, although I made a bunch of changes, which is probably why they sank in the middle. Oh well, they were still good.


I made this curry last week. Isn’t it pretty? Veggies, curry and coconut. It sounded good in my head. It looked good. It smelled so good… It was not good. Not good at all. CURRY FAIL.

This sweet and sour on the other hand, was really good. I cut the tofu so small because that’s the way The Brit likes it. I fried it because, well, it’s good like that. This totally made up for the curry fail.


I made the veggie lunch meat recipe from Vegan Dad. I had to steam it in two separate logs because my steamer is stupid, but otherwise I followed the recipe exactly. It turned out very well, I can’t wait to play around with the seasonings some more.


I used half of the veggie lunch meat to make chopped BBQ sandwiches. The inspiration came from Vegan Dad as well, but I made my own BBQ sauce rather than his recipe (which I’m sure is delicious!). I also changed up the cooking method to use my slow cooker, since I wanted it to be ready when I got home.


Served up on homemade bread with homemade coleslaw, it was awesome.

As promised, here is a picture of the cakes I delivered on Friday:


The groom is a private investigator, hence the magnifying glass on the groom’s cake. It’s made of sugar and is completely edible.

I made another pizza yesterday. I think this one might have been even better than my last one. I cooked some Tofurky Italian Sausage, which is made with sun-dried tomatoes and basil, and put that on there along with onions, peppers, sun-dried tomatoes, fresh basil and soy feta:



I also finally got around to making another batch of Kelly and Garrick tester cookies. These were Thin Bakery-Style Chocolate Chip Cookies:
