<p>What a fantastic idea. Delicious, green, fresh tasting pesto, without all the fat. I love love love this recipe. Paired here with linguine, mushrooms and onions, this was a very satisfying meal.</p>
<p>I had pesto leftover, but I wanted something a bit lighter at lunchtime &#8211; what&#8217;s a girl to do? Spaghetti squash was the perfect solution. If you&#8217;ve never cooked up one of these gems, I highly suggest you do. I just cut mine in half (it was fairly small), put it cut-side down on a baking sheet and put it in a 375ºF oven for about 30 minutes, until it was nice and tender. Larger squash will take a bit longer &#8211; you&#8217;ll know it&#8217;s done when you can easily  pierce the flesh with a knife.</p>
<p>Now the fun part! Just take a fork and run it along from stem to stern, the flesh will separate itself into lovely spaghetti-like strands all on its own.</p>

<p>Then just use it like you would spaghetti! It was really fantastic topped with Edamame Pesto and crushed red pepper flakes, eaten out on the back patio on a cool day.</p>
<p>Last, I&#8217;ll leave you with a picture of Fauxstess Cuppies (from VWaV). I made these ages ago but never got around to posting the photo. And with all this healthy food I&#8217;ve been posting lately, I feel the need to balance it out with a hefty dose of sugar.</p>

I also took the leftover tofu marinade and added some pineapple juice to it, and cooked it down to make a glaze. This was my first time grilling tofu (I know, what?!) and I was super-happy with the results. Yummilicious.</span></span></div>

I made this before our trip to Texas in an effort to use up a bag of spinach that was going to go off. It&#8217;s mostly spinach, a little fresh basil, pine nuts, garlic, olive oil, salt and pepper. I decided at the end to blend in some soft silken tofu to make it creamy. It certainly did! This was rich and yummy.</span></span></div>

We started with falafel, hummus and pita. Oh how I love falafel! Also, this was some of the best hummus I&#8217;ve ever put in my mouth.<br />

That was at 3pm, and by 4pm we were on our way. We managed to find a Starbucks in backwoods Arkansas, and I said a little prayer of thanks to the god of double tall soy lattes. The rest of the trip was uneventful enough, and we got in to my grandparents&#8217; house at around 12:30am. </span></div>

<div><span style="font-size: 13px;">I haven&#8217;t taken any pictures since we arrived, so I&#8217;ll just post a couple from before we left. I bought a box of Health is Wealth spring rolls on the recommendation of a friend and they were actually really tasty. The sauce you see there is SPICY tamarind sauce, which I love. I don&#8217;t think it so much loves me back, though.</span></div>

Also, I used whole wheat macaroni. Next time I think I might puree the tofu instead of crumbling it up, and I might make more sauce as well. I think one and a half times the amount would be better. Also, I think I will add some tahini to the sauce to add a little creaminess and tang.</span></span></div>

<div><span style="font-family:verdana;"><span style="font-size:small;">Once the Mac Daddy was in the oven, I got started on my brownies. They were really easy to make, and oh-so-heavenly to eat. I (of course) subbed whole wheat pastry flour for the all purpose, but other than that I stuck to the recipe.</span></span></div>

<div><span style="font-family:verdana;"><span style="font-size:small;">The author warns to not overbake the brownies, and in my efforts to be cautious I managed to over-compensate and underbake the brownies. They sank in the middle as they cooled, and were pretty much impossible to cut and eat like actual brownies, but that didn&#8217;t stop me from enjoying them. They were rich and fudgy with an overall blueberry flavor, and biting into the occasional whole blueberry really sealed the deal for me. The contrast of slightly tart with decadently sweet is phenomenal. Next time I will add more blueberries. Oh yes, and about half of these ended up in the freezer as well.</span></span></div>
