Pizza and more tester cookies

I just made the most awesome pizza, and The Brit won’t even try it. Anybody want some pizza? I used a store-bought crust (because, as I believe we have established, I am lazy) and topped it with pizza sauce, peppers, onions, mushrooms, sun-dried tomatoes, pineapple and soy feta. I didn’t have any black olives, but they would go perfectly on this pizza.


I have also been busy fulfilling my duty as a tester for Kelly and Garrick’s vegan cookie book. Such a chore, I know.

These were so good! Rich and chocolaty with just the right kick of spice. The friend I mentioned in my last post ate like nine of them. Seriously.

A story and tester cookies

I ate the Stir Fried Eggplant with Tofu again yesterday. I couldn’t help myself. I still didn’t get a picture, but I have a great story to make up for it! 


After dinner The Brit and I decided to go hang out at Starbucks. Yes, I practically live at Starbucks (I’m there right now), because I used to work there and it really is a home away from home. Anyway, I could only eat half my food so I took the rest to go. When we got to Starbucks my friend (who works there) started talking about how he hadn’t eaten all day, so I gave him my leftovers. He ate it, and LOVED it. He’s a total omnivore, but he seriously went for this eggplant and tofu big time.

After he got off work we decided to go out again (yes, he’s the same friend I hung out with two nights before – haha!). The Brit decided to go home rather than go out again, and my friend and I went to Huey’s, which is a local hangout that serves burgers and such (and the best onion rings you will ever eat). It was pretty late at this point and we decided to get some food. He let me order so we could split something, and I got a veggie burger with onion rings. They make the best veggie burgers.

Anyway, after we ate that he looked at me and was like “I could totally go vegan if the food is all this good!”. Did I mention I’ve also been bringing him vegan cupcakes and cookies practically every day? I have now made it my goal to convert him. Mwuahahahaha!

Speaking of cookies, I have been selected as a tester for an upcoming vegan cookie book, which is seriously going to rock your face off. I’ve tested two recipes so far.

I have got to stop making so many sweets

The first thing I ever learned to cook was ‘no bake’ cookies made with chocolate, peanut butter and oatmeal. I was seven at the time, and I now can’t imagine why any mother would allow a seven year old to boil hot sugar on the stove by herself – but in my family it was fine. I was one of four kids (at the time) and I guess my mother just couldn’t be bothered with the whole ‘possibility of severe burns’ thing. I also learned at that time to make what my mother called ‘tuna casserole’, but you don’t want to know what was in it.

Anyway, I decided to pull that good old standby out of my brain (I don’t think I’ve ever had an actual written recipe for these) and veganize it. It wasn’t exactly difficult to change just a couple of ingredients, but the results were great. I don’t know if it’s just been a long time since I made them or what, but I think they tasted even better than the cookies of my childhood.

Thankfully I managed to give most of them away… otherwise I probably would have ended up eating all of them myself.

Despite my best efforts, I spent the better part of this morning feeling more than a little down. What is a girl to do? 

Bake cookies of course!



Almost nothing makes me feel better faster than baking up a fresh batch of cookies.

I used the recipe for Chewy Oatmeal Raisin Cookies from Veganomicon. I didn’t have any brown rice syrup, so I used maple syrup instead. I was going to use agave nectar but I didn’t have the 1/3 cup the recipe called for. I also was a teensy bit shy of the full two cups of rolled oats, so I just topped up with some steel cut oats. Also, I soaked my raisins in hot water to plump them up a bit before adding them.

Other than that, I followed the recipe exactly. It calls for whole wheat pastry flour or all purpose, and thankfully I had JUST enough whole wheat pastry flour for the recipe. They turned out so yummy. Even The Brit thinks they’re great.


The recipe makes a lot of cookies, so I only baked up a dozen of them. The rest I dropped onto a baking sheet and stuck them in the freezer. Once they were frozen I popped them off the sheet and tossed them into a ziploc bag. Now I have two dozen cookies in the freezer ready to be baked whenever I need them.

And I have the feeling I will be needing them frequently over the next few weeks.
