They&#8217;re normally $1.49, but they were on special for $1.25. Meh, better&#8230; but not great. I can get Clif bars for $1, so I have a hard time spending that much on other bars, even though Larabars are my favorite.</span></span></div>

<div><span style="font-family:verdana;"><span style="font-size:small;">Then I noticed that almost all of the bars had 40¢ off coupons stuck to them. DING! Kroger doubles coupons under 60¢, which meant these Larabars, which are normally $1.49, were 45¢! Hello! The cashier looked at me a little funny, but I stocked up. They only had Apple Pie, Cherry Pie, Chocolate Coconut Chew and Cashew Cookie (no Ginger Snap, boo), but I wasn&#8217;t about to complain. I might just go back and buy more before they go off sale!<br />

The <a href="http://midsouthpeace.org/">Mid-South Peace and Justice Center</a> put together a huge event called Bands not Bombs on Saturday, at which Food Not Bombs had a booth and planned a little bake sale to raise money for the pantry, which is used to feed the less fortunate.</span></span></span></div>

When we got to Starbucks my friend (who works there) started talking about how he hadn&#8217;t eaten all day, so I gave him my leftovers. He ate it, and LOVED it. He&#8217;s a total omnivore, but he seriously went for this eggplant and tofu big time.</span></div>

<div><span style="  ;font-family:verdana;font-size:13px;">After he got off work we decided to go out again (yes, he&#8217;s the same friend I hung out with two nights before &#8211; haha!). The Brit decided to go home rather than go out again, and my friend and I went to Huey&#8217;s, which is a local hangout that serves burgers and such (and the best onion rings you will ever eat). It was pretty late at this point and we decided to get some food. He let me order so we could split something, and I got a veggie burger with onion rings. They make the best veggie burgers.</span></div>

			<content:encoded><![CDATA[<div><span style="  ;font-family:verdana;font-size:13px;">The first thing I ever learned to cook was &#8216;no bake&#8217; cookies made with chocolate, peanut butter and oatmeal. I was seven at the time, and I now can&#8217;t imagine why any mother would allow a seven year old to boil hot sugar on the stove by herself &#8211; but in my family it was fine. I was one of four kids (at the time) and I guess my mother just couldn&#8217;t be bothered with the whole &#8216;possibility of severe burns&#8217; thing. I also learned at that time to make what my mother called &#8216;tuna casserole&#8217;, but you don&#8217;t want to know what was in it.</span></div>

<div><span style=" ;font-family:verdana;font-size:13px;">Anyway, I decided to pull that good old standby out of my brain (I don&#8217;t think I&#8217;ve ever had an actual written recipe for these) and veganize it. It wasn&#8217;t exactly difficult to change just a couple of ingredients, but the results were great. I don&#8217;t know if it&#8217;s just been a long time since I made them or what, but I think they tasted even better than the cookies of my childhood.</span></div>

<div><span style="font-family: verdana;"><span style="font-size: small;">I used the recipe for Chewy Oatmeal Raisin Cookies from Veganomicon. I didn&#8217;t have any brown rice syrup, so I used maple syrup instead. I was going to use agave nectar but I didn&#8217;t have the 1/3 cup the recipe called for. I also was a teensy bit shy of the full two cups of rolled oats, so I just topped up with some steel cut oats. Also, I soaked my raisins in hot water to plump them up a bit before adding them.</span></span></div>

<div><span style="font-family: verdana;"><span style="font-size: small;">Other than that, I followed the recipe exactly. It calls for whole wheat pastry flour or all purpose, and thankfully I had JUST enough whole wheat pastry flour for the recipe. They turned out so yummy. Even The Brit thinks they&#8217;re great.</span></span></div>

The rest I dropped onto a baking sheet and stuck them in the freezer. Once they were frozen I popped them off the sheet and tossed them into a ziploc bag. Now I have two dozen cookies in the freezer ready to be baked whenever I need them. </span></span></span></div>
