Tapas, NOT topless

I get into very uninteresting food ruts sometimes. Lately I’ve been eating noochy toast every morning. It’s just whole wheat toast topped with vegan margarine and nutritional yeast. This morning I had it with blueberry soy yogurt and orange juice. Yum.


Lunch was definitely more interesting! I met up with some people at a new restaurant – Safari World Tapas Bar. We started with falafel, hummus and pita. Oh how I love falafel! Also, this was some of the best hummus I’ve ever put in my mouth.



Ahnah had falafel. Of course I had to try some – it was great.


Vaughan had a veggie stir-fry, which also looked delicious (sorry for the flash, the lighting was bad).


Bianca and I both had the tomato basil pasta. It was so good! It was definitely a good lunch.

Compensating

We have water! We still have to have someone come out and rehang drywall so they can put the sink back. Right now it’s living on our (wet) bedroom floor:

Hopefully all of that will be over with soon. Oy.

This post is pic heavy because I am both trying to make up for my lack of posts, and trying to make up for the fact that it will probably be Monday before I post again. I have a wedding cake and groom’s cake to make and deliver to Oxford, MS tomorrow, and another small wedding cake to be delivered in Memphis on Sunday. I will be crazy busy/extremely exhausted, so I’m apologizing in advance.

Banana Wheat Germ Muffins from V’con. These were very tasty, and not too sweet. I baked them in muffin liners with little animals on them, because they are adorable.


My first ever seitan! I used the recipe for Seitan O’Greatness from the PPK forums. I really liked the flavor and how easy it was. The Brit loved the texture, but wasn’t so crazy about the flavor. Anyone who knows him would know what a huge deal that is – he actually almost liked it! I’m going to make it again and switch up the seasonings until I find something he’ll like.


I will take this opportunity to introduce two of my favorite kitchen tools. First, my cast iron wok (all oiled up here, ready for action):


Second, my rice cooker. I freaking love my rice cooker:


Using these two tools, together with my Seitan O’Greatness, I made a yummy sweet and sour stir-fry that was actually pretty good. Even The Brit ate it!


I always make a little extra rice so I can have rice pudding. This time I added some currants, which I love! I shook up the soy milk before adding it, and for some reason it stayed really foamy even after cooking it with the rice. You can see the little bubbles:


We bought some more strawberries and I decided we should have strawberries and champagne. After trimming and cutting the strawberries, I macerated them in some Grand Marnier and a little sugar for about half an hour. Then I poured on a little Silk Soy Creamer (The Brit used real cream) and served them up with a glass of nicely chilled champagne. Indulgent, I know! (sorry for the crappy picture)


And last, this morning I made ‘Egg McVegans’ using this recipe. I pressed the tofu overnight in the fridge so I would have more time this morning. Also, I used Gimme Lean ‘sausage’ instead of the veggie bacon. The tofu was a little too vinegary for my tastes, but I may try making these again with less vinegar and maybe some more seasonings. All in all they were pretty good, though.

They sure looked like the real thing!

Lazy afternoon

I went to another cake club meeting Tuesday night, this time accompanied by the lovely and talented Bianca (of Vegan Crunk). We got to play with my airbrush, which I only recently purchased a replacement compressor for. I bought the airbrush system about a year and a half ago, but after just a couple of months my compressor didn’t feel it could go on, and it jumped off my kitchen counter to an untimely demise.

I attempted to airbrush a fairy, but it turned out a bit… special needs. Bianca created a bunch of grapes and a rainbow, which were infinitely better than my broad-shouldered amputee fairy. We were going to bring the pictures home and put them on our fridges (or at very least take pictures and post them on our blogs), but they got thrown away without our consent. So, no pictures. I guess not everyone could appreciate the true artistic talent that went into them.

Also, my hands are still multi-colored.

I don’t have a lot to share in the way of food, but hopefully some more interesting meals are coming up soon (hint: I made my first seitan!). In the meantime, I’ll show you what I had for breakfast. It’s oatmeal made with soy milk instead of water, a mashed up banana and a spoonful of Dark Chocolate Dreams chocolate peanut butter, all mixed up together. So good.


Right now I’m at Quetzal, a little internet cafe in midtown. They serve coffee during the day, and alcohol at night. I think that’s the basic gist anyway – this is actually my first time here. It’s got a funky feel to it though, and the servers are super-nice. I’m sitting in one of the comfy chairs in the back, near the open double-doors. There is a nice breeze blowing through, giving the place a fresh and open feel – which is helped along by the tall vaulted ceiling and large sky light.
 



I ordered my latte at the counter and was told to go ahead and have a seat – they would bring it to me. I suppose it’s a bar-style tab system, encouraging people to drink as much as they would like before paying at the end. My drink came out and it was perfect. It’s not easy to steam soy properly – too hot and it tastes scorched, and soy foam is hard to achieve. This latte couldn’t have been better. A step up from my usual Starbucks, I have to say.

I only wish I lived closer to this place – and all the cool little places this city has to offer.

Lazy cheater food

The last couple of days have been lazy food days, sorry.

Saturday I made what I consider to be a ‘cheater’ meal. It consists of Tofurky sausages, bell pepper and onion mix from the freezer, bottled bbq sauce and tinned pineapple chunks, all served over brown basmati rice. That’s right, no real cooking involved. If I were a good vegan I would have made my own sausages and chopped my own veggies. 

Whatever, it was still good!

Things only went downhill from there. Yesterday I skipped breakfast and had rice pudding for lunch. What?! I know!

I took leftover brown basmati rice, added vanilla soy milk and a handful of golden raisins and cooked it until it was thickened. I then added a generous amount of cinnamon and a little maple syrup. I sprinkled chopped pecans on top for the finishing touch. Warm and comforting on a rainy day.

In keeping with the downhill spiral, I ate only roasted sweet potato for dinner. I peeled and chopped an enormous sweet potato, then coated it with a little olive oil, maple syrup, pureed ginger (I keep a jar of it in my fridge because I’m lazy) and salt and pepper before roasting. 

Kind of a sad food day, I know, but it was good.
This morning I slept late, so pancakes were in order. I made plain ol’ whole wheat pancakes, but for some reason they turned out kind of thin. Oh well, they were tasty anyway.
Especially with some blueberry preserves spread on top!

Tacos!

Saturday I met up with some people from Food Awareness (the local veggie society) – including Bianca from Vegan Crunk - at Java, Juice and Jazz for lunch.  My oldest sister also came and brought her youngest son for the fantastic meal.

We had some awesome vegan soft tacos, along with chips and three dips – guacamole, salsa and vegan cheese dip. The tacos were amazing.

We were all so full, but no one could resist when the server came around and offered a dessert of crumbled vegan cookies topped with bananas, strawberries and chocolate mint sauce. Luckily my sister was there for me to share with, otherwise I might have had to eat it all myself (what a shame that would have been). 

Not much interesting in the way of cooking lately. I’ve been eating a lot of sandwiches (I almost shed a tear when I ate the last of my mock tuna salad). For breakfast the last couple of days I’ve had soy yogurt with granola. This morning it was peach yogurt with apple blueberry granola – tasty!
The Brit and I will be going out of town later this week. We’re heading down to Fort Worth, TX to visit my grandparents. We’ll be leaving on Thursday (I think) and coming back probably Sunday or Monday. I’m going to make sure I get to visit Spiral Diner while I’m down there!
