I love leftovers

Last week some friends and I did a food swap. Kind of like a potluck, but you get to take the food home and eat other people’s leftovers. Basically it means that I ended up with yummy food that I didn’t have to cook. Score.

I made little veggie loaves, but you know what those look like so I won’t post yet another picture. Bianca made this delicious pizza:


I didn’t get a picture of Hart’s carrot soufflé (more like a casserole, but seriously yum). I also don’t have any pics of Nic’s pâté (my friends are so fancy, no?), because I already had too much food in my house, so I wrapped it up and put it in the freezer. I will take some pics when I do something with it. Meanwhile, you can check out Bianca’s much more thorough post about our swap here.

I also made some Self-Frosting Peanut Butter Cupcakes from My Sweet Vegan for the food swap, although I made a bunch of changes, which is probably why they sank in the middle. Oh well, they were still good.


I made this curry last week. Isn’t it pretty? Veggies, curry and coconut. It sounded good in my head. It looked good. It smelled so good… It was not good. Not good at all. CURRY FAIL.

This sweet and sour on the other hand, was really good. I cut the tofu so small because that’s the way The Brit likes it. I fried it because, well, it’s good like that. This totally made up for the curry fail.


I made the veggie lunch meat recipe from Vegan Dad. I had to steam it in two separate logs because my steamer is stupid, but otherwise I followed the recipe exactly. It turned out very well, I can’t wait to play around with the seasonings some more.


I used half of the veggie lunch meat to make chopped BBQ sandwiches. The inspiration came from Vegan Dad as well, but I made my own BBQ sauce rather than his recipe (which I’m sure is delicious!). I also changed up the cooking method to use my slow cooker, since I wanted it to be ready when I got home.


Served up on homemade bread with homemade coleslaw, it was awesome.

 

The last of the travels

In Nashville we got to meet up with a couple of people from the PPK for brunch at Fido. It was super-fun and yummy, although I didn’t manage to get any pictures of my food (sorry!).

After Nashville we wound up driving to Asheville NC, you know, just for fun. After just a little searching online we found this fantastic place called The Green Sage:


I opted for a soy latte:


And this enormous brunch plate with scrambled tofu, sweet potato home fries, vegan sausage, a giant vegan biscuit(!) and Earth Balance. Holy yum, this was good.

 


It was freezing out, so after we finished eating brunch we decided to stick around in the warmth for a bit longer and indulge in a little Earl Grey tea. They had soy milk, rice milk, agave and stevia on the condiment bar! I love Asheville.


That’s it for our trip out east. Last week The Brit and I went to TX to visit the grandparents, so of course a visit to Spiral Diner was in order. The Brit and I each ordered a sandwich and split them, so we could both try a couple of things.

We both agreed that the BBQ Seitan sandwich was better, but we managed to finish them both anyway :)  After lunch I ordered an almond milk latte with vanilla syrup. It was soooo good.

Of course, I couldn’t leave without dessert. We ordered the ‘Deathstar Sundae’, which was a warm brownie with homemade vanilla ‘i-scream’ and soy whipped cream, with a shot of espresso on the side to pour over the whole thing. The Brit didn’t really like it (he’s not much of a sweets person), so I had to eat most of it. Such a sacrifice, right?


Overall, this visit to Spiral Diner went over with The Brit much better than last time, and that in itself made me happier than the food did. Well, almost.

Last supper

Thanks to everyone who offered their condolences for my recent loss.

My new oven will be delivered tomorrow. I have needed a new oven since we moved into this house, but I’ve never HAD to buy one, so I’ve been putting it off. It is kind of a blessing in disguise, although choosing a replacement oven was not without it’s own trials.

The oven that died is the original from when the house was built. It’s 23 years old and never held a consistent temperature since I’ve lived in the house. It’s always required constant babysitting of my oven thermometer to not turn every cake and meal into charcoal. In a nutshell, it was time.

Unfortunately, it is a 27″ drop-in oven. The counter around it is built to fit a 27″ drop-in oven, and nothing else. There is only one 27″ drop-in oven on the market these days. It is small, it is crappy, and it is $1200. If I was going to spend that amount, I did not want to settle for a newer (admittedly better) version of the same thing. I had a tough choice to make.

I decided to shell out a little more, and get an oven that I love. Namely, this oven. I had enough money saved from my cake business to buy it in cash, thankfully. It will not fit where the old oven is, so it will have to sit on the other side of the counter (in the dining room) until I can figure something out. I can’t afford to remodel the kitchen right now, so I’ll just have to get used to having the stove in another room. It’s hard to describe, but I’ll take a picture once it’s here and in place.

Baked BBQ Tempeh, couscous and mixed veggies (from the freezer!). Easy, but good.

Buying ovens isn’t all I’ve been up to the last few days. I’ve also made petit fours (among other things which I didn’t get pictures of)! These were for a bridal shower. They were having a zebra stripe and monogram theme, with red accents.



I think the zebra stripes turned out so cute:

Lazy cheater food

The last couple of days have been lazy food days, sorry.

Saturday I made what I consider to be a ‘cheater’ meal. It consists of Tofurky sausages, bell pepper and onion mix from the freezer, bottled bbq sauce and tinned pineapple chunks, all served over brown basmati rice. That’s right, no real cooking involved. If I were a good vegan I would have made my own sausages and chopped my own veggies. 

Whatever, it was still good!

Things only went downhill from there. Yesterday I skipped breakfast and had rice pudding for lunch. What?! I know!

I took leftover brown basmati rice, added vanilla soy milk and a handful of golden raisins and cooked it until it was thickened. I then added a generous amount of cinnamon and a little maple syrup. I sprinkled chopped pecans on top for the finishing touch. Warm and comforting on a rainy day.

In keeping with the downhill spiral, I ate only roasted sweet potato for dinner. I peeled and chopped an enormous sweet potato, then coated it with a little olive oil, maple syrup, pureed ginger (I keep a jar of it in my fridge because I’m lazy) and salt and pepper before roasting. 

Kind of a sad food day, I know, but it was good.
This morning I slept late, so pancakes were in order. I made plain ol’ whole wheat pancakes, but for some reason they turned out kind of thin. Oh well, they were tasty anyway.
Especially with some blueberry preserves spread on top!

Did everybody have a happy zombie day?

Saturday I made hot cross buns for The Brit. They were most definitely not vegan, but they were what he wanted. They didn’t turn out very pretty at all, but he said they were good so that’s all that matters. We took some out to my parents’ house yesterday and they seemed to like them too.

I also made ‘Snobby Joes’ from - you guessed it - Veganomicon. They are like sloppy joes but made with lentils instead of meat. I didn’t have green bell pepper so I used orange - otherwise I made the recipe exactly as stated, but it just didn’t seem right to me. First, I was used to more ‘tang’, so I added in some red wine vinegar. Much better, but still not quite there. Then it hit me - liquid smoke! I added a little in and tasted it… perfect.

On a cracked wheat bun with some sweet potato fries and a green salad (not pictured) it was delicious. 

And, as usual, half of it went in the freezer. I think eventually I’ll reach a point where I’ll be able to go about two weeks without cooking, just by cleaning out my freezer.
