Tamarind Orange Glazed Tofu

Alright, now that you’re settled, let’s get down to breakin’ this sucker in with a recipe, shall we? I took another shot at Tamarind Orange Glazed Tofu last week, and I was so darn happy with the results I thought I’d share the recipe here.

Tamarind Orange Glazed Tofu

Ingredients:

  • 1 block of extra firm tofu, pressed and sliced however you want (I like triangles)
  • oil for frying

For the glaze:

  • ¾ cup orange juice
  • ¼ cup agave or maple syrup
  • 1½ tablespoons soy sauce
  • 1 tablespoon tamarind concentrate
  • 2 teaspoons sriracha (use less if you don’t want it spicy)
  • 1 teaspoon jarred minced garlic (or 2 cloves)
  1. Heat oil in a large skillet over medium heat and pan-fry sliced tofu in a single layer, until browned and crisp on both sides, 10-15 minutes.
  2. While tofu is frying, whisk together all ingredients for the glaze, and set aside. 
  3. Once the tofu is sufficiently browned on both sides, give your glaze mixture a stir and pour it over the top of the tofu. Allow the liquid to reduce down and thicken to form a glaze, about 5 minutes. Enjoy!

Makes 4 servings.

          Now watch yourself on the bartering gig. Now that I know you are an web designing guru you might very well be in trouble.

          And since I’m going there — how the h*ll do I make my avatars larger in my own comment section? I did talk to the theme designer and he said I had to edit my .php file on my bluehost account.

          He admitted it was a junky workaround but that was his suggestion. I did dip a toe into the FTP section at blue host, found the file, opened it and then freaked out. Brain shut down.

          I want to just go into my WordPress dashboard and make all of this technical nonsense go away.

          Now having said all of that. Um, I’m not sure I have more than a chicken or a goat to barter with.

            You were given inaccurate advice. All layout can be controlled by the stylesheet. You may have read about CSS (Cascading Style Sheet) That’s some weird voodoo simply meaning a separate file that can position, color, add borders, size etc – do things formatting wise to any element within the page.

            So here’s what you’ll need to do:

            Open /wp-content/themes/simplicity/style.css

            Add the following line at the bottom of the file:

            img.avatar {padding: 0px; border: 0px; width: 48px; height: 48px;}

            What that line means is that you are saying “On all img tags that have the class avatar, I would like to set padding to none, the border to none, and apply a fixed width and height, as specified in pixels.” There is already a style that sets padding and a border on your avatars, so an override here is necessary to reset. It’s currently displaying at 32×32 (actual size of graphic) with 19 pixels padding and a 1px grey border.

            Just adjust the size as you see fit. Things will look pixelated if you make them too big, because the original image is 32px.

            Well, I suppose you weren’t given completely inaccurate advice. Editing the PHP would be necessary to force WP to use a larger image file. The images are pulled from gravatar.com You can select, via the url of the image file, exactly how big you want it to be. I suggest doing it via the stylesheet as I suggest, and then if the degraded image is not satisfactory, we can edit how WP includes the image.

            See where it says s=32 ?

            Change that to s=64 or s=128. It will output a graphic with that as the dimension, up to 512px.

        Hi, riding the short bus here.

        I did go into my dashboard at WordPress went under Appearance/Editor/Stylesheet (style.css) when that file was open I added the code you gave me at the bottom

        img.avatar {padding: 0px; border: 0px; width: 48px; height: 48px;}

        Then I hit save. It saved successfully and nothing changed on my comments.

        Now I wonder if I do have to go to my cPanel at blue host to get to

        Open /wp-content/themes/simplicity/style.css

        Is that where I should be?

  5. OMG! This new site looks awesome. I’m surprised you didn’t do that sooner seeing as how you’re man is in the internet business and all. And I’m so gonna make that tofu. Did you get your tamarind concentrate at the giant Asian market?

      Thanks! Yeah, I don’t know why it took me so long to enroll his assistance.

      I got the tamarind concentrate ages ago at Whole Foods, so it cost me an arm and a leg, but I know I’ve seen it way cheaper at the big Asian market.
