I know it’s been a few days, but I have been cooking, I promise! I made a really yummy sweet and sour the other day with ‘meat’balls, but I didn’t get a picture. Oops.
At least I remembered to snap a picture of lunch yesterday - Vegan Dad’s Best Ever Vegan Alfredo! with whole wheat pasta, peas and Morningstar Chik’n Strips. The Brit didn’t really like it so I probably won’t make it again, but I thought it was really good.
Today we had a favorite in these parts, my vegan meatloaf. This time I divided it into six individual portions (in a jumbo muffin tin) for easy serving and freezing. Served with peas and mashed potatoes and gravy, of course!
Last but not least, some photos that I just found that I realized I never uploaded (oops again!). These are from my family’s joint January/February birthday party, which included my own.

Some people were afraid to try them, but I thought they were great… and that’s all that really matters, right?

i like the idea of making individual sized meat cakes. hmmmm. cupcake tins decorated with a mashed tater topping and ketchup?
oops, note that i meant meatless loaf cakes, not meat cakes of course.
Afraid to try a cupcake?! Those people are crazy. No offense to your fam, but seriously…they’re adorable little baby cupcakes.
Also, Vegan Dad’s alfredo looks awesome. Especially with those chicken strips.
And is that your own recipe for meatloaf? Do tell! I’ve been wanting to make a good meatloaf for awhile.

such a smart idea on the wee meatloaves. i need to get some mini pans and give that a whirl sometime. and oooh my gosh – the alfredo! sweet sh*t that looks damn deeeelicious! i think dan & i will have to try that soon! mmmmmmmmmmm!

Ooh everything looks great, but especially that meatloaf! Have you ever posted the recipe for it? I’m always looking for a good meatloaf recipe.
The horse cake looks great! And the lemon-lavender cupcakes sound interesting. I have never tried lavender before and I am very curious to see what it would taste like in a dessert. Screw all those people who wouldn’t try your cupcakes! That just means more for you.

Very impressive piping! I wish I had that kind of skill- I’m just terrible at decorating cakes.
