Well, I survived. And you should all be so proud of me, too. By the time I left to deliver the last cake of the weekend yesterday, my kitchen was clean! That was a fete in and of itself.
I felt a huge amount of relief once the cake was set up and decorated with flowers. I don’t do two weddings in one weekend very often, and there’s a reason for that. At least yesterday’s cake was so small!
I loved the flavor we decided on for this one, too. Each tier is three layers of toasted coconut cake with one layer of lime curd filling, one layer of coconut cream filling and covered in key lime buttercream. This cake wasn’t vegan, but now I want to make a vegan version that I can eat (minus the lime curd, unless someone knows how to make vegan curd?!).

It has to be very stressful to work on two wedding cakes the same weekend… Now you deserve a break! (which is always the good thing about working hard!)
I love the duo-layered idea, and also not to mention coconut+lime=perfect! It’s weird, I don’t even remember what curd tastes like, though…

haha I think the cake actually sounds BETTER without the curd… because “curd” stands for “curdled” which means rotten/sour! (Never liked that word lol) So I bet your vegan version would be even better… of course I don’t think it could LOOK better than the non-vegan one you have pictured—as usual, I am in awe of your skills.
Oh, and I made cupcakes the other day and was having a hard time transporting them, and I totally thought of you transporting your giant cake!

Wow, I just wanted to tell you how much I love your blog, especially the cakes! I’m a vegan baker for my job, but I never get to do cakes, just cookies, muffins, cupcakes, etc.(i.e. portable stuff). You’re so lucky & talented!
