Roasted veggies and cupcakes

I am failing miserably at this blogging thing lately.
I have spent the last few days recovering from last weekend, which really did drain me more than I had expected. I had an awesome time spending the night with my friend Ahnah Wednesday night, getting drunk and just chilling out. It was just what I needed.

I made chickpea cutlets AGAIN the other night, and remembered why I love roasted vegetables so much. Potatoes and parsnips are probably my two favorites.



Today I managed to veganize one of my own cake recipes! It’s chocolate sour cream cake. The flavor is perfect, but the texture isn’t quite right yet. I’ll keep working on it.



I brushed these with some Kahlua, then topped them with espresso buttercream and a dusting of cocoa. Delish!

    Oh, and the veggies and chickpea cutlets look good too (I noticed they were lacking in comment-love… tends to happen when you post them alongside vegan baked goods!)
