Mock tuna salad

Lunch today was a mock tuna salad sandwich. I made the salad yesterday – it was my first time making ‘tuno’ and I think it turned out pretty well. The only explanation I have for the green color is the nori, which I guess I ground a little too fine before adding the chickpeas.

To be honest, I rarely – if ever – measure anything when I cook, so I couldn’t tell you exactly what I put in it and I doubt I’d be able to make it the same way again if I tried.

I know I started with two cans of chickpeas, one sheet of nori and one teaspoon of kelp powder. From there I added: Vegenaise, prepared mustard, salt, pepper, celery seed, garlic salt, Bragg’s and nutritional yeast. I didn’t have any relish so I tossed some Wickles into the food processor and used those. I only had a few though, next time I’ll be sure to add more.

I was going to add some tomato to my sandwich, but it was, um, a little off. Oh well, the sandwich was good anyway! Which is good, because I have enough leftovers to last for days.

    Is it weird that I think the green color makes it look yummy?

    Yes, my car IS made out of fondant… I absolutely love working with fondant! It’s like edible clay! Sadly, I think it tastes awful lol.

    The mock tuna salad is really great, even if I didn’t miss tuna at all.

    Hahaha I DO use Wilton’s brand of fondant, so that must be why I think it tastes awful. I’ll have to look for a different brand. But until I find a different brand, I don’t mind just pushing the fondant off my piece of cake. After all, it’s the cake and frosting that I REALLY want to eat anyway!

    Yay for getting to go to Spiral Diner!!! I actually don’t know the area of Ft. Worth too well, so I don’t know of any other places to recommend. But let me know how your trip to Spiral goes if you do end up going there!

    I was never a fan of tuna when I did eat meat, but that looks good! I like seaweed, even though it does taste fishy (I never liked fish, ever)…and I adore chickpeas! I’ll have to try that.

    Thanks for joining us this weekend at the Java Juice. It was sooo tasty! I still can’t believe there’s such an option in Memphis. I just hope it lasts.
