The last couple of days have been lazy food days, sorry.
Saturday I made what I consider to be a ‘cheater’ meal. It consists of Tofurky sausages, bell pepper and onion mix from the freezer, bottled bbq sauce and tinned pineapple chunks, all served over brown basmati rice. That’s right, no real cooking involved. If I were a good vegan I would have made my own sausages and chopped my own veggies.
Whatever, it was still good!
Things only went downhill from there. Yesterday I skipped breakfast and had rice pudding for lunch. What?! I know!
I took leftover brown basmati rice, added vanilla soy milk and a handful of golden raisins and cooked it until it was thickened. I then added a generous amount of cinnamon and a little maple syrup. I sprinkled chopped pecans on top for the finishing touch. Warm and comforting on a rainy day.
In keeping with the downhill spiral, I ate only roasted sweet potato for dinner. I peeled and chopped an enormous sweet potato, then coated it with a little olive oil, maple syrup, pureed ginger (I keep a jar of it in my fridge because I’m lazy) and salt and pepper before roasting.
Kind of a sad food day, I know, but it was good.
This morning I slept late, so pancakes were in order. I made plain ol’ whole wheat pancakes, but for some reason they turned out kind of thin. Oh well, they were tasty anyway.
Especially with some blueberry preserves spread on top!

And I also think it looks pretty good to be called lazy food. What can be better than rice pudding for lunch?
If lazy food = not much protein than yes. But anytime you cook at all is never lazy. PANCAKE!
Ooh rice pudding! I’ve not had a vegan version yet. What a good idea. mmmm
Dude, those pancakes look amazing. And don’t feel lazy for throwing stuff together…that sausage dish looks super-good. I know it’s bad, but I like things that come in cans sometimes….it’s probably the Arkansas in me.
BTW, we have a Food Awareness meeting on Thursday at Wild Oats. Can you come? And do you have any suggestions for simple recipes that I can throw together for the cooking demo?
I think you’re on to something with that Chocolate Mousse idea! I found an easy recipe online, but if you have a favorite one, let me know. I was thinking about a quinoa black bean salad, but dessert sounds better. Thanks!
