When I am sad, I eat a cookie


Despite my best efforts, I spent the better part of this morning feeling more than a little down. What is a girl to do? 

Bake cookies of course!



Almost nothing makes me feel better faster than baking up a fresh batch of cookies.

I used the recipe for Chewy Oatmeal Raisin Cookies from Veganomicon. I didn’t have any brown rice syrup, so I used maple syrup instead. I was going to use agave nectar but I didn’t have the 1/3 cup the recipe called for. I also was a teensy bit shy of the full two cups of rolled oats, so I just topped up with some steel cut oats. Also, I soaked my raisins in hot water to plump them up a bit before adding them.

Other than that, I followed the recipe exactly. It calls for whole wheat pastry flour or all purpose, and thankfully I had JUST enough whole wheat pastry flour for the recipe. They turned out so yummy. Even The Brit thinks they’re great.


The recipe makes a lot of cookies, so I only baked up a dozen of them. The rest I dropped onto a baking sheet and stuck them in the freezer. Once they were frozen I popped them off the sheet and tossed them into a ziploc bag. Now I have two dozen cookies in the freezer ready to be baked whenever I need them.

And I have the feeling I will be needing them frequently over the next few weeks.

    It sucks you feel down. But your cookies look amazing! I’ll have to try that recipe. I’ve been working my way through reading the Nomicon front front to back (I know, I’m a nerd, I actually read cookbooks like novels). And I haven’t made it to desserts yet.

    And what a great idea, freezing the unbaked cookies. I’ll try that sometime. Since I live alone, I usually end up giving all my baked goods away because I can’t finish them on my own.
