I have got to stop making so many sweets

The first thing I ever learned to cook was ‘no bake’ cookies made with chocolate, peanut butter and oatmeal. I was seven at the time, and I now can’t imagine why any mother would allow a seven year old to boil hot sugar on the stove by herself – but in my family it was fine. I was one of four kids (at the time) and I guess my mother just couldn’t be bothered with the whole ‘possibility of severe burns’ thing. I also learned at that time to make what my mother called ‘tuna casserole’, but you don’t want to know what was in it.

Anyway, I decided to pull that good old standby out of my brain (I don’t think I’ve ever had an actual written recipe for these) and veganize it. It wasn’t exactly difficult to change just a couple of ingredients, but the results were great. I don’t know if it’s just been a long time since I made them or what, but I think they tasted even better than the cookies of my childhood.

Thankfully I managed to give most of them away… otherwise I probably would have ended up eating all of them myself.

    And I had a great time today. Thanks for coming. You’ll have to join us again for one of our crazy outings. Vaughan is awesome about putting fun weekend night plans together and he always gets a big group together — for plays, movie nights, etc.

    I love that recipe! But like you said, it’s easy to eat most of those cookies before they make it off the wax paper. At least that’s what happens over here.

    I have such fond memories of making these cookies (as an early teen) at my friend Karen’s house over the summer.

    Well, she made everything I watched, but they’re still good memories.
