Monday I filed for unemployment, requested a referral letter from my old boss and updated my resume. As soon as I get that referral letter, I’ll start submitting my resume to just about anyone who will take it.
Yesterday The Brit and I went to my sister’s house for dinner. Well, we both went, but only I went for dinner. The Brit is extremely picky, so he ate before we left. She made fajitas! I can’t just say “fajitas”, I have to say “fajitas!”, because they are a party it your mouth.
She cooked portobello mushrooms, red, yellow and green bell peppers, red onions, squash and zucchini. There was also lettuce, tomatoes and salsa, ole! And of course there was cheese and sour cream for them. She only had white tortillas, but I wasn’t about to pass up the fajita! goodness because of that. What’s a little white flour every once in a while?
The only thing that would have made them better would have been some Tofutti sour cream, but it is nowhere to be found in my area and I wasn’t about to drive across town for it either. I didn’t get any pictures of the fajitas! because I forgot my camera.. sorry.
Today I think I will make some Fudgy Wudgy Blueberry Brownies from V’con, because I already have all of the ingredients and because the thought of them makes me drool. Back in the day when I used to work at Starbucks, we sold chocolate covered blueberries and they were freakin’ awesome. Ever since, the combination of chocolate and blueberries has been one of my favorites.
Those, I will definitely take pictures of.

On the white flour tortillas, I feel the same way. I’ve made a rule for myself that I can have white flour and white sugar when I go to a restaurant, a potluck, or dinner at a friend’s house.
And I’ve been eyeing those brownies too! I love blueberries and chocolate!
Wow. I guess I missed several posts. I just went back and read them. Where was I? Weird.
Anyway, that truly, truly sucks!! I’m soooo sorry! Now I understand the need for cookies and blueberry brownies!
The Memphis Flyer, where I work, just laid off 4 people two weeks ago because times are tough for the newspaper business. Fortunately, no writers were laid off. But it’s still scary.
Anyway, I wish you the best of luck in finding a new job…hopefully, you’ll find something you love even more. For now, eat brownies! And lots of Soy Delicious Turtle Tracks soy cream (it’s at Wild Oats…if you’ve never had it, I highly recommend it).
What part of town do you live in? I know that Kroger is awesome about carrying veg things like soy sour cream & cream cheese. You can find them in most parts of Bartlett, Cordova, G’town & even Southaven!
